    A light and fresh potato salad with a lemon herb dressing. Only 75 calories!

    Ingredients

    • 3/4 lb. potatoes (fingerling or baby red)
    • 1 Tbls Olive Oil
    • 1/4 tsp lemon zest
    • 1 Tbls lemon juice
    • 1 tsp Dijon mustard
    • 1/4 tsp black pepper
    • 1/3 cup arugula, chopped
    • 1 Tbls parsley, chopped
    • 1 Tbls fresh basil, chopped
    • 1 Tbls fresh chives, chopped

    Directions

    1. Cut potatoes into about 1 inch pieces. Put in a saucepan, fill cold water until potatoes are covered. Cover. Over high heat, bring to a boil. Reduce heat to medium high, and cook for about 5 minutes, or until fork tender. Drain.
    2. In the mean time, whisk together olive oil, lemon zest, lemon juice, mustard, and black pepper. Add arugula, parsley, basil, and chives. Mix in the drained potatoes, stirring to coat. Serve immediately.
