Diabetic Herb Potato Salad
Ingredients
- 1 lb New red potatoes
- 1/2 c. Sliced radishes (optional)
- 3 Tbsp. Plain, nonfat yogurt
- 1 Tbsp. Nonfat mayonnaise
- 1 1/2 tsp Dijon mustard
- 1/2 tsp Garlic
- 1/2 tsp Dry basil
- 1/4 tsp Dry thyme
- 1/4 tsp Onion pwdr
- 1/4 tsp Salt (optional)

- Scrub potatoes & cube. Place in medium saucepan and cover with water. Bring to a boil. Cover, reduce heat and simmer 12 min or possibly till potatoes are done. Drain. Mix dressing ingredients and combine warm potatoes, dressing and radishes. Serve warm or possibly cool.
