Herbed Egg Salad Sandwiches
Ingredients
- 4 x Hard-boiled large Large eggs, peeled and minced
- 2 Tbsp. Mayonnaise
- 2 Tbsp. Lowfat sour cream
- 2 Tbsp. Chopped fresh herbs such as parsley, chives, and/or possibly tarragon
- 1 x Scallion, chopped
- 2 tsp Fresh lemon juice, or possibly to taste
- 1 tsp Dijon mustard A healthy pinch freshly grated lemon zest
- 8 slc Whole-grain bread
Directions
- In a bowl stir together all ingredients except bread with salt and pepper to taste till combined well.
- Make 4 sandwiches, pressing bread slices together gently.
- Serves 4.
