Lemon Grass Cake
Cake scented with lemon grass and it's orange glazing for the nice finishing touch. Ingredients
- For cake
- 1/3 cup butter
- 1 cup caster sugar
- 2 eggs
- 2 cups self raising flour
- 3/4 cup milk
- 3 sticks lemon grass
- For orange glaze
- 1 orange - extract juice
- 10g butter
- 1 tsp orange rind
- 1 tbsp sugar
Directions
- For cake
- Process/blend lemon grass with milk. Drain to remove lemon grass residues.
- Cream butter and sugar till light and fluffy.
- Add eggs one by one; while alternating between flour and milk
- mixture.
- Beat on low speed to combine in.
- Tip/add mixture into a greased baking pan.
- Bake at 175c for one hour or until the cake is done.
- For the orange glaze
- Simmer all ingredients for a thick syrup.
- Once cake is out of oven, immediately pour glaze over.
- Cool down and cut into pieces/slices.
