Lemon Corn Bread Muffins
Great for the morning, afternoon, evening to snack on. Ingredients
- 1 cup Self-Rising Flour
- 1-1/4 Cup Corn Meal
- 2 Large Eggs (beaten)
- Pinch of Iodized Salt
- 1 tablespoon Pure Honey
- 2 Lemons for juices
Directions
- Pre Heat Oven 400 F
- I use non stick muffin tins
- In a mixing bowl add all ingredients and stir to combine (do not over mix batter)
- Fill Muffin Tin wells 3/4ths full
- Place into the oven and bake 12-14 minutes or until golden brown
