Lemon Coconut Cupcakes
A party favorite! Ingredients
- One box Lemon cake/cupcake Mix (Follow box instructions for eggs, oil, etc).
- 2 cups confectioners sugar
- one lemon juice and zest
- 3/4 cup toasted sweetened coconut flakes lightly toasted
Directions
- Pre Heat Oven to 350 F
- Follow Lemon cake/cupcake box instructions
- add batter to tin cupcake wells and bake as per instructions
- In a mixing bowl of your stand mixer add confectioners sugar, lemon juice and zest and rum on high to well combine. frost the cupcakes once cooled, add toasted coconut to the top of each
- Enjoy-these disappear rather quickly here!
