  • Lemon Chicken With Herbs

    Ingredients

    • 1 can Healthy Choices Cream of Roasted Chicken w Herbs Cond. Soup
    • 1/4 c. non-fat lowfat milk
    • 2 Tbsp. lemon juice
    • 2 Tbsp. chopped parsley vegetable cooking spray
    • 4 x boneless skinless chicken breast halves
    • 1/2 c. sliced mushrooms
    • 1/4 c. red onion minced

    Directions

    1. In small bowl, mix soup, lowfat milk, lemon juice and parsley. Set aside. Spray large non-stick skillet with vegetable cooking spray. Heat on Medium heat 1 minute. Add in chicken and brown 5 min on each side. Remove from skillet. Add in mushrooms and onion to skillet, saute/fry 2-3 min. Stir in soup mix. Return chicken to skillet, reduce heat to Low and simmer, covered, 5-10 min or possibly till chicken is no longer pin in center.
    2. Makes 4 servings.
    3. Serving Ideas : Serve with pasta, rice or possibly potatoes and a green vegetable.
