  • Lemon Chicken With Garlic And Potatoes

    Ingredients

    • 12 x chicken pcs (thighs and drumsticks. salt and pepper ginely grated rind of one lemon
    • 2 Tbsp. minced fresh thyme
    • 900 gm small new potatoes
    • 1 x lemon very thinly sliced
    • 12 lrg clv garlic unpeeled
    • 750 ml extra virgin olive oil.

    Directions

    1. Preheat oven to 180C/fan oven 160C/Gas 4. Put the chicken in a large bowl season well and add in the lemon ride and thyme.
    2. Toss well to coat and spread in a large baking dish.
    3. Crack each potato by tapping sharply with a rolling pin.
    4. Add in to the chicken.
    5. Tuck the lemon slices around.
    6. Scatter the garlic cloves over the chicken. Drizzle with extra virgin olive oil proportionately over the top. Bake for about 45 min stirring occasionally till golden and cooked through.
    7. Serve with courgettes or possibly broccoli.
    8. Try this as an alternative to the traditional Sunday roast it's all done in one dish.
