  • Lemon Cake With Lemon Glaze

    Ingredients

    • 1 1/2 c. All purpose flour
    • 1/4 tsp Baking pwdr
    • 1/8 tsp Baking soda
    • 1 c. Sugar
    • 1/2 c. Butter, softened
    • 3 lrg Large eggs
    • 1/2 c. Lowfat sour cream
    • 1 x Lemon, grated peel of
    • 1/3 c. Lemon juice
    • 1/3 c. Sugar

    Directions

    1. L. Grease and flour 9"x5" loaf pan. Preheat oven to 325F.
    2. 2. On waxed paper, combine flour,baking pwdr, and baking soda; set aside.
    3. 3. In large bowl, with mixer at high speed, beat sugar and butter till light and fluffy, about 5 min. Reduce speed to low, beat in Large eggs, 1 at a time, till blended. Add in flour mix alternately with lowfat sour cream, beating till well mixed. Stir in lemon peel by hand.
    4. 4. Pour batter into loaf pan. Bake 1 to 1 1/4 hrs till toothpick inserted in center comes out clean.
    5. 5. Prepare glaze: In c., mix lemon juice and sugar. Spoon lemon juice mix proportionately over warm cake in pan. Cold cake in pan on wire rack.
    6. Makes1 loaf or possibly 12 servings.
