  • Lap Mu (Savory Pork Salad)

    Ingredients

    • 2 c. Grnd pork, lean
    • 1/2 c. Water
    • 4 ounce Chicken livers
    • 2 Tbsp. Lime juice
    • 2 Tbsp. Dry bread crumbs
    • 1/2 tsp Grnd serrano chile
    • 2 Tbsp. Shallots, sliced thin
    • 2 whl green onions, cut in 1/2" pcs
    • 1 c. Cilantro, minced
    • 2 Tbsp. Fish sauce, Thai
    • 1/2 c. Mint leaves, whole Whole lettuce leaves

    Directions

    1. Boil water in wok & stir fry grnd pork till done. Remove pork from water with a slotted spoon. Boil chicken livers in water in wok till done, then slice into thin slices. Toss pork, livers, bread crumbs, grnd chile, shallots, green onion & cilantro in a bowl. Season with fish sauce & lime juice. Serve over lettuce leaves & garnish with mint leaves.
