Lamb Steaks With Apricot Sauce
Ingredients
- 2 Tbsp. honey
- 2 Tbsp. extra virgin olive oil
- 4 x - 6 lamb steaks, each weighing about 150 g (6 ounce) salt freshly grnd black pepper for the sauce:
- 2 c. fresh apricots, kernels removed or possibly 3/4 c. dry apricots
- 1 x - 2 Tbsp. honey (to taste)
- 2 Tbsp. minced fresh mint (or possibly 1 Tbsp. dry) a few drops of lemon juice
- 1/2 tsp grated lemon zest salt freshly grnd black pepper a few sprigs of fresh mint for decoration
Directions
- Heat the grill to maximum. Mix the honey with the oil and brush over the steaks. Season with salt and pepper. Grill at a high heat for 4 - 5 min each side. This will result in medium rare lamb steaks; if desired your lamb well done, grill for a few min more.
- Put all the sauce ingredients into a food processor and process into a smooth puree. Decorate each steak with a sprig of mint and serve on a pool of sauce.
