  • Lamb Steaks With Apricot Sauce

    Ingredients

    • 2 Tbsp. honey
    • 2 Tbsp. extra virgin olive oil
    • 4 x - 6 lamb steaks, each weighing about 150 g (6 ounce) salt freshly grnd black pepper for the sauce:
    • 2 c. fresh apricots, kernels removed or possibly 3/4 c. dry apricots
    • 1 x - 2 Tbsp. honey (to taste)
    • 2 Tbsp. minced fresh mint (or possibly 1 Tbsp. dry) a few drops of lemon juice
    • 1/2 tsp grated lemon zest salt freshly grnd black pepper a few sprigs of fresh mint for decoration

    Directions

    1. Heat the grill to maximum. Mix the honey with the oil and brush over the steaks. Season with salt and pepper. Grill at a high heat for 4 - 5 min each side. This will result in medium rare lamb steaks; if desired your lamb well done, grill for a few min more.
    2. Put all the sauce ingredients into a food processor and process into a smooth puree. Decorate each steak with a sprig of mint and serve on a pool of sauce.
