  • Lamb Loin Coated In Sesame Seeds And Black Pepper

    Ingredients

    • 100 ml Lamb jus, (4fl ounce) Nutmeg
    • 600 gm Lamb loin, (1 1/2lb)
    • 100 gm Sesame seeds, (4oz)
    • 25 gm Crushed black pepper, (3/4oz)
    • 400 gm Large potatoes, (14oz)
    • 50 ml Double cream, (2fl ounce)
    • 50 gm Butter, (2oz)
    • 9 x Baby carrot
    • 1 x Egg
    • 100 gm Breadcrumbs, (4oz)
    • 25 gm Flour, (3/4oz)
    • 9 x Baby turnips
    • 300 gm Savoy cabbage, (11oz)
    • 100 gm Butter, (4oz)
    • 25 gm Caster sugar, (3/4oz)

    Directions

    1. Roll the lamb in the sesame seeds and black pepper. Seal in a warm pan and roast in a warm oven for 10 to 12 min.
    2. Boil the potatoes, drain and mash them, then add in the cream and butter.
    3. Dip the carrots in the flour, then the egg wash and finally the bread crumbs. Deep fry till tender, crisp and golden.
    4. Sweat the cabbage in the butter and season with salt, pepper and nutmeg.
    5. Carmelise the turnips in the butter and sugar.
    6. Put the mash into a buttered cutter and top with the cabbage. Slice the lamb, place on the mash and cabbage. Garnish with the carrots, turnips and lamb jus.
