The Cookie Cookbook These old-fashioned cookies from the Piedmont region of Italy are sweet, light, and tasty Ingredients
- 10 tablespoons butter, softened
- 1/2 cup superfine sugar
- 1 egg yolk
- 1/2 tsp almond extract
- 1 cup ground almonds
- 1 1/2 cups flour
- 2 ounces (2 squares) semisweet chocolate
Directions
- Cream the butter and sugar using an electric mixer until light and fluffy
- Beat in the egg yolk, almond extract, ground almonds, and the flour until evenly mixed
- Chill for about 2 hours until firm
- Preheat the oven to 325 F
- Line several baking sheets with baking parchment paper
- Break offf small pieces of the dough
- Roll into balls with your hands making 40 altogether
- Place the balls on the baking sheets, spacing them out as they will spread in the oven
- Bake for 20 minutes, or until golden
- Remove the baking sheets from the oven
- Lift off the parchment paper with the cookies still on it
- Place on the wire racks
- Allow to cool
- Repeat with the remaining mixture
- Lift the cooled cookies off the paper
- Melt the chocolate in a bowl over a pan of hot water
- Place some of the chocolate on one cookie, top with another to make a sandwich
- Allow to cool completely
