    The Cookie Cookbook These old-fashioned cookies from the Piedmont region of Italy are sweet, light, and tasty

    Ingredients

    • 10 tablespoons butter, softened
    • 1/2 cup superfine sugar
    • 1 egg yolk
    • 1/2 tsp almond extract
    • 1 cup ground almonds
    • 1 1/2 cups flour
    • 2 ounces (2 squares) semisweet chocolate

    Directions

    1. Cream the butter and sugar using an electric mixer until light and fluffy
    2. Beat in the egg yolk, almond extract, ground almonds, and the flour until evenly mixed
    3. Chill for about 2 hours until firm
    4. Preheat the oven to 325 F
    5. Line several baking sheets with baking parchment paper
    6. Break offf small pieces of the dough
    7. Roll into balls with your hands making 40 altogether
    8. Place the balls on the baking sheets, spacing them out as they will spread in the oven
    9. Bake for 20 minutes, or until golden
    10. Remove the baking sheets from the oven
    11. Lift off the parchment paper with the cookies still on it
    12. Place on the wire racks
    13. Allow to cool
    14. Repeat with the remaining mixture
    15. Lift the cooled cookies off the paper
    16. Melt the chocolate in a bowl over a pan of hot water
    17. Place some of the chocolate on one cookie, top with another to make a sandwich
    18. Allow to cool completely
