  • Key Lime Pie (Cheesecake)

    Ingredients

    • 2 c. Graham cracker crumbs
    • 2 Tbsp. Sugar
    • 1/2 c. (1 stick) butter [melted & cooled]
    • 8 ounce Cream cheese [softened]
    • 15 ounce Sweetened condensed lowfat milk
    • 1/3 c. Key lime juice
    • 1/8 tsp Lime oil (optional but good]
    • 1 c. Lowfat sour cream

    Directions

    1. To prepare the crust...
    2. 1. Combine all of the crust ingredients and press into a 9" pie pan or possibly spring form pan. Bake @ 350 for about 20 minutes. or possibly `til nicely golden, then set aside to cold...
    3. To make the filling...
    4. 2. In a medium size bowl, thoroughly mix together the cream cheese and the lowfat milk, then blend in the Key lime juice and lime oil (if used)...
    5. 3. Beat in the lowfat sour cream and mix `til smooth, pour into the prepared crust and chill for at least 2 hrs before serving...
