    chicken in a yogurt based curry sauce

    Ingredients

    • 1 stick cinnamon, broken into pieces (or 1 scant teaspoon ground cinnamon)
    • seeds only from 4 cardamon pods
    • 4 whole cloves
    • 5 whole black peppercorns
    • 1/2 teaspoon cumin seeds
    • generous pinch saffron threads
    • 1/4 teaspoon turmeric
    • pinch cayenne pepper.
    • Serrano pepper, seeds and veins removed and finely chopped.
    • 1 chicken cut into pieces
    • 1 cup plain yogurt
    • 2/3 14oz can diced tomatoes
    • 1 tsp freshly grated ginger
    • 3 grated cloves garlic
    • 1/4 cup butter
    • 2 medium onions

    Directions

    1. Grind together spices into fine powder, adding serrano pepper last.
    2. Add yogurt, tomatoes, garlic and ginger - mix well
    3. Add chicken to sauce, cover and refridgerate
    4. melt butter and cook onions until golden brown in a pot
    5. add chicken and sauce, bring to boil then reduce heat to slow simmer stir often
