Jerk Pork Chops

- 4 pork chops
- 4 green onions, finely chopped
- 1/2 cup orange juice
- 1/4 cup soy sauce
- 3/4 cup balsamic vinegar
- 1/4 cup olive oil
- Juice from 1 lime
- 1 scotch bonnet pepper, seeded and finely chopped
- 1 clove of garlic, minced
- 1 tbsp dried thyme
- 3/4 tsp ground cinnamon
- 3/4 tsp ground nutmeg
- 1 1/2 tsp cayenne pepper
- 1 1/2 tsp ground sage
- 2 tbsp salt
- 1 1/2 tsp black pepper
- 1/2 tsp of red pepper flakes
Directions
- In a large bowl, combine the red pepper flakes, thyme, cayenne pepper, black pepper, sage, nutmeg, cinnamon, salt, garlic and sugar
- With a wire whisk, mix in the olive oil, soy sauce, vinegar, orange juice and lime juice
- Add the scotch bonnet pepper and onions
- Stir well and add the pork chops
- Cover and marinate for at least one hour, longer if possible
- Preheat an outdoor grill
- Remove the pork chops from the marinade and grill for 8 to 10 minutes on each side or until fully cooked
- While grilling, baste frequently with the marinade
