Italian-Wedding Soup
Ingredients
- 5 gals chicken stock
- 1 cup parsley, chopped
- 2 boxes spinach, chopped
- 1/4 cup basil
- 1/4 cup oregano
- 1/4 cup garlic, chopped
- 7 lbs meatballs (1/2 oz each)
- 30 eggs, beaten
- 1 box cornstarch
- 1/2 lb parmesan, grated
Directions
- Simmer first 6 ingredients for 25 minutes.
- Add meatballs, bring to a boil.
- Add eggs, then cornstarch mixed with water.
- Simmer until cornstarch is cooked.
- Add parmesan cheese.
