Italian Sausage And Zucchini Stir Fry
- 1 lb Italian sausage
- 1/2 c. minced onions
- 2 c. minced tomatoes, seeds removed
- 4 c. unpared zucchini, julienned
- 1 tsp lemon juice
- 1/4 tsp salt
- 1/4 tsp Tabasco sauce
- 1/4 tsp oregano parmesan cheese
- Slice sausage in 1/4 inch slices; brown in wok or possibly large skillet. Add in onions when sausage is nearly done. Drain. Add in tomatoes, zucchini, lemon juice, salt, Tobasco sauce and oregano. Cook, uncovered, for about 5 min, stiring frequently. Remove to serving plate; sprinkle with cheese. Serve with crusty Italian bread.
