Italian Bean Patties
Great little change of pace from the usual fare. I love cooking like my grandma and mama did. Both were SO creative, coming up with dishes that were both delicious and economical, a feat many have let fall by the wayside today, with convenience foods the norm instead of the exception. It is quite a challenge to prepare a great meal from almost nothing!!!! Ingredients
- 2 cups cooked beans
- 1 beaten egg
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 2 tsp. Italian seasoning
- 1 cup bread crumbs
- 2 tbsp. cornmeal or flour (I use cornmeal)
- 2 tbsp. oil
Directions
- Precook beans and cool to make forming easier.
- Mash beans in a large bowl. Add eggs and spices.
- Stir in bread crumbs, then shape into about 8 patties.
- Roll in cornmeal or flour.
- Fry slowly in oil over medium heat until crispy and golden brown
- on both sides.
- Yum!!!!
