    Ingredients

    • 2TBLS OIL
    • 2CHOPPED ONIONS
    • 2LBS STEW MEAT
    • 2CPS STOUT BEER(GUINESS)
    • 2TBLS FLOUR
    • 1 PINCH CAYENNE
    • 2CPS CHOPPED CARROTS
    • 2TBLSTOMATO PASTE
    • 3CLOVES MINCED GARLIC
    • SALT AND PEPPER TO TASTE
    • INGREDIENTS FOR COLCANNON
    • 6LARGE POTATOES PEELED AND QUARTERED
    • 5CUPS CHOPPED CABBAGE
    • 1CUP CHOPPED LEEKS
    • 4TBLS BUTTER
    • 1CUP HALF AND HALF
    • FRESH MADE BACON BITS
    • SALT AND PEPPER TO TASTE

    Directions

    1. In a medium sized bowl mix flour,salt ,pepper and cayenne
    2. dredge the beef and shake off excess
    3. In a deep skillet heat the oil Brown meat on all sides
    4. add onions ,garlic,brown for five minutes
    5. add tomato paste and small amt of water and cook five more minutes
    6. add 1 cup of the beer and as it boils scrape any bits from the bottom ,pour in the remaining beer and add carrots,covered on simmer about two to two and a half hours till meat is tender,check seasoning and stir occasionaly
    7. COLCANNON
    8. Cook potatoes till tender
    9. cook cabbage till soft
    10. mash potatoes with warm half and half
    11. add butter,leeks season with salt and pepper
    12. add bacon bits and serve with the stew .
