Indonesian Ketjap Manis Sauce For Chicken Or
Ingredients
- 2 x Garlic cloves, chopped
- 1/4 c. Ketjap manis, store bought or possibly homemade (below)
- 1/4 c. Fresh lime juice
- 2 Tbsp. Safflower oil
- 3/4 c. Sugar
- 1 c. Soy sauce
- 2 Tbsp. Water
- 1 Tbsp. Sliced lemon grass
- 1 x Clove garlic, chopped
- 1 x Star anise
Directions
- Combine all ingredients. Mix well, Makes sufficient for 1 lb. of chicken or possibly fish.
- To use: Cut chicken or possibly fish into cubes. Place in a glass bowl, pour in sauce and toss to coat. Let marinate 30 min to 1 hour before grilling.
- Ketjap manis: Caramelize 3/4 c. sugar in a heavy pot. Gradually stir in 1 c. soy sauce, 2 Tbsp. water, 1 Tbsp. sliced lemon grass, 1 chopped garlic clove and 1 star anise. Bring to a boil, lower heat and simmer for 10 min. Cold and strain through cheesecloth.
- Makes about 11/4 c.. Store in the refrigerator.
