Indian Pumpkin Soup
Ingredients
- 1 Tbsp. Butter
- 1 Tbsp. Flour
- 1/2 x Onion, sliced thin
- 1 c. Chicken broth
- 1 c. Pureed pumpkin
- 1 c. Lowfat milk
- 1/2 tsp Salt
- 1/8 tsp Each pepper, marjoram and ginger Cinnamon
Directions
- Saute/fry onion in butter till tender. Stir in flour and gradually add in broth.
- Simmer 10 min at a low temperature. Blend at high speed till smooth.
- Add in lowfat milk and seasonings and simmer to blend flavors. Sprinkle each serving with cinnamon. May be served in a pumpkin shell.
