Hungarian Pork And Mushroom Stew
Ingredients
- 1/4 c. oil
- 2 lb boneless pork shoulder, cut into 1 in. cubes
- 3 c. minced tomatoes 4 medium( I used canned)
- 1 c. sliced carrots
- 1 c. sliced celery
- 1/2 c. minced onion
- 1 Tbsp. paprika
- 1 3/4 tsp salt
- 1/4 tsp black pepper or possibly to taste
- 1 lb mushrooms
- 1 c. lowfat sour cream
- 1 Tbsp. all purpose flour
Directions
- In a large saucepan heat oil till warm. Add in pork; brown on all sides. Drain and throw away fat. Add in tomatoes, carrots celery, onion, paprika, salt and pepper; simmer coveredfor 30 min, stirring occasionally. Rinse, pat dry and slice mushrooms Yield: 5 1/2 c.).Add in mushrooms to saucepan; continue to simmer, covered, for 30 min, stirring occasionally. Combine lowfat sour cream and flour; stir into stew. Cook till thickened, about 5 min stirring constantly. Serve over buttered noodles, if you like. 6 c..
