  • Hungarian Chicken Paprika Stew With Tomato

    Ingredients

    • (Paprikas csirkeporkolt paradicsommal) Chicken appears in Hungarian cookery often but it is never boring because there are so many ways to serve it. Authentic Chicken Paprika never has tomatoes in it. Chicken Paprika Stew does. Make plenty of dumplings to go with it.
    • 2 x onions minced
    • 4 Tbsp. shortening, corn oil or possibly lard
    • 3 Tbsp. Hungarian paprika
    • 2 tsp sugar, don't omit
    • 1/8 tsp black pepper or possibly whole pepper corns
    • 1 x bay leaf
    • 2 tsp salt
    • 4 x to 5 lbs. chicken disjointed, use legs, thighs, breast and back for best flavor
    • 1 lrg can of crushed tomatoes
    • 2 c. water
    • 2 Tbsp. flour
    • 2 Tbsp. butter
    • 1/2 pt lowfat sour cream

    Directions

    1. Brown onions in shortening. Add in seasonings and chicken, brown 10 min. Don't let burn. Add in tomatoes, bay leaf and water, cover and let simmer slowly till it is tender. It will smell wonderful! To thicken gravy, mix into a paste 2 Tbs. soft butter with 2 Tbs. flour and stir into the stew liquid. Cook a few min till the liquid thickens. Serve with dumplings or possibly wide noodles. Top each serving with lowfat sour cream.
