Huevos Con Cecina (Eggs With Dried Beef)
Ingredients
- 2 1/2 ounce Beef, dry
- 1 Tbsp. Butter, unsalted
- 1/2 tsp Chile, pequin, crumbled
- 1 x Onions, finely minced Salt Pepper, black
- 4 x Large eggs
- 2 Tbsp. Heavy cream
Directions
- Pour boiling water over the dry beef; drain and chop coarsely. Heat the butter in skillet, saute/fry onion till limp. Add in beef and chiles, cook gently for 2-3 min.
- Beat the Large eggs with the cream and scramble them into the beef mix over moderately low heat. Stir, with a wooden spoon, slowly and constantly, to reach the entire surface of the pan, till the Large eggs are set, about 3-4 min. Serve immediately.
