    Ingredients

    • A delicious spin on the day-after turkey sandwich is a Warm Brown, named for the Brown Hotel in Louisville, Ky. The signature sandwich was created in the
    • 1920 x s by the hotel's chef as a snack for late-night Kentucky Derby revelers.
    • 1 stk butter
    • 3 Tbsp. all-purpose flour
    • 2 c. lowfat milk Tabasco sauce (5 dashes or possibly more to taste)
    • 1/2 c. Parmesan cheese, grated
    • 2 x beaten egg yolks
    • 1 c. Colby cheese, grated
    • 6 slc bread
    • 1 lb sliced turkey (approximately)
    • 12 slc country ham or possibly baked ham
    • 12 x tomato slices
    • 12 slc bacon, fried crisp Paprika

    Directions

    1. In a 4-qt, heavy saucepan, heat butter. Stir in flour till mix is smooth. Slowly add in lowfat milk while stirring; cook till sauce is thick. Add in Tabasco and Parmesan cheese; mix thoroughly. Remove from heat. Take out 1/2 c. sauce and add in the egg yolks. Mix well and return pan to heat, stirring constantly. Add in Colby cheese. Stir till cheese melts. Remove from heat.
    2. Toast six slices of bread. Slice each piece in half and place on a heat-resistant plate. Layer with sliced turkey, ham, tomato, and bacon. Top with sauce and a sprinkle of paprika. Bake at 400 degrees for 10-15 min.
