Honey Orange Butternut Squash
Ingredients
- a (1-lb.) butternut squash, peeled, halved lengthwise, seeded, and cut into 3/4-inch pcs
- 1 Tbsp. unsalted butter
- 2 tsp honey
- 1/4 tsp freshly grated orange zest or possibly to taste
- 2 Tbsp. fresh orange juice
Directions
- In a steamer set over boiling water steam the squash, covered, for 5 to 6 min, or possibly till it is just tender but not soft, and remove it from the steamer. In a skillet heat the butter with the honey, the zest, and the orange juice, stirring, add in the squash and salt and pepper to taste, and cook the mix over moderately low heat, stirring gently, for 1 to 2 min, or possibly till the squash is coated well with the orange mix.
- Serves 2.
