    Ingredients

    • 1/2 lb Lean grnd beef
    • 1 x Onion, minced
    • 1 c. Celery, minced
    • 1 c. Carrot, minced
    • 1/2 c. Sweet green pepper, minced
    • 1/4 c. Raisins
    • 28 ounce Canned beans
    • 14 ounce Canned tomatoes, diced Undrained
    • 2 Tbsp. Chili pwdr
    • 1/4 tsp Warm pepper flakes
    • 1/2 tsp Salt
    • 1/2 tsp Pepper Cornmeal Crust
    • 2/3 c. All-purpose flour
    • 1/3 c. Cornmeal
    • 1 Tbsp. Baking pwdr
    • 1/2 tsp Salt
    • 1 Tbsp. Butter, softened
    • 1/4 c. Cheddar cheese, shredded
    • 1 x Egg
    • 1/2 c. Skim lowfat milk
    • 1 Tbsp. Fresh parsley, minced or possibly
    • 1/2 tsp Dry

    Directions

    1. In large nonstick skillet or possibly saucepan, brown beef over medium-high heat, breaking up with back of spoon, about 8 min. Drain off fat.
    2. Add in onion, celery, carrot, green pepper and raisins; cook for 5 min.
    3. Add in beans, tomatoes, chili pwdr and warm pepper flakes; cover and simmer for 30 min. Stir in salt and pepper. Spoon into deep square 12-c. casserole.
    4. Cornmeal Crust: In bowl, mix together flour, cornmeal, sugar, baking pwdr and salt. Cut in butter till mix is crumbly. Fold in cheese. beat egg with lowfat milk and stir into flour mix just till blended. Spread proportionately over chili. Sprinkle with parsley.
    5. Bake in 375F 190C oven for about 25 min or possibly till crust is golden.
