  • Highland Fondue

    Ingredients

    • 1 sm onion finely minced
    • 3 tsp butter
    • 1 c. lowfat milk
    • 4 c. Scottish or possibly Mature English Cheddar cheese grated Canadian will do but make sure it's very strong
    • 3 tsp cornstarch
    • 4 Tbsp. whisky (60 ml) preferably Scottish but Bourbon will do
    • 1 x cubes rye and onion breads to serve just as good with regular crusty bread

    Directions

    1. Put onion and butter into a pan.
    2. Cook over gentle heat till onion is soft. Add in lowfat milk and heat till bubbling. Gradually stir in grated cheese and cook till melted, stirring continuously. In a small bowl, blend cornstarch smoothly with whisky. Stir whisky mix into cheese mix and cook 2-3 min till thick, stir continuously. Pour into fondue pot and serve with cubes of bread.
    3. Comments: Make sure you keep stirring, otherwise it will stick and burn. If it goes lumpy, turn the heat up for a short while and stir more vigorously.
    4. NOTES : Description: A variation on classic swiss fondue, but completely delicious (and easy)
