Herbed Stuffed Mushrooms
Ingredients
- 16 x mushrooms
- 2 Tbsp. butter
- 1 x onions, medium
- 1 tsp garlic, crushed
- 1 c. sausage mince
- 1/2 c. fresh herbs, minced salt, pepper
- 1 c. fresh breadcrumbs
Directions
- Wash mushrooms and pat dry.
- Remove the stems from the mushrooms and chop stems fine. Brush inside of mushroom tops with melted butter.
- Finely dice onions.
- Heat 1/2 the butter in a pan, add in onion and garlic, cook 2 min without colour. Add in mushrooms and cook a further 2-3 min. Remove from heat.
- Mix mushrooms and herbs into sausage mince and season well.
- Pipe or possibly spoon sausage mix into mushrooms, then dip sausage top into breadcrumbs. Arrange in a well buttered shallow roasting tray.
- Dot tops with butter and cook in a moderate oven 180C/350F till cooked through, about 10 min.
