Herb Roasted Potatoes Poupon
Ingredients
- 1/3 c. grey poupon dijon mustard
- 2 Tbsp. extra virgin olive oil
- 1 x clove garlic minced
- 1/2 tsp Italian seasoning
- 6 med red skin potatoes (about 2 lbs.) cut in chunks
Directions
- Mix all ingredients except potatoes in small bowl.
- Place potatoes in lightly greased 13 x 9 x 2 inch baking pan or possibly on shallow baking sheet; toss with mustard mix.
- Bake at 425 degrees for 35 to 40 min or possibly till potatoes are fork tender, stirring occasionally.
