Ingredients

  • 1/3 c. grey poupon dijon mustard
  • 2 Tbsp. extra virgin olive oil
  • 1 x clove garlic minced
  • 1/2 tsp Italian seasoning
  • 6 med red skin potatoes (about 2 lbs.) cut in chunks

Directions

  1. Mix all ingredients except potatoes in small bowl.
  2. Place potatoes in lightly greased 13 x 9 x 2 inch baking pan or possibly on shallow baking sheet; toss with mustard mix.
  3. Bake at 425 degrees for 35 to 40 min or possibly till potatoes are fork tender, stirring occasionally.
