Herb Breaded Lamb Cutlets
Ingredients
- 12 x lamb, cutlets
- 1 Tbsp. lemon juice
- 1/4 tsp garlic pwdr
- 1/10 tsp cayenne pepper salt, pepper
- 2 x Large eggs
- 1 c. breadcrumbs
- 2 tsp parsley, minced
- 1 tsp mixed herbs
- 4 Tbsp. vegetable oil
Directions
- Mix breadcrumbs and herbs together.
- Season the lamb cutlets with lemon juice and spices. Dip in beaten egg and roll in breadcrumbs to coat.
- Cook in either of the following ways:In a pan:Heat oil in a pan, gently cook lamb over low heat for 4-5 min each side till golden.
- In the oven:Place lamb on a well oiled tray, brush with oil, cook at 390F/200C for 15-20 min till golden.
- Serve with lemon wedges.
