Ingredients

  • 12 x lamb, cutlets
  • 1 Tbsp. lemon juice
  • 1/4 tsp garlic pwdr
  • 1/10 tsp cayenne pepper salt, pepper
  • 2 x Large eggs
  • 1 c. breadcrumbs
  • 2 tsp parsley, minced
  • 1 tsp mixed herbs
  • 4 Tbsp. vegetable oil

Directions

  1. Mix breadcrumbs and herbs together.
  2. Season the lamb cutlets with lemon juice and spices. Dip in beaten egg and roll in breadcrumbs to coat.
  3. Cook in either of the following ways:In a pan:Heat oil in a pan, gently cook lamb over low heat for 4-5 min each side till golden.
  4. In the oven:Place lamb on a well oiled tray, brush with oil, cook at 390F/200C for 15-20 min till golden.
  5. Serve with lemon wedges.
