Hearty Chicken Vegetable Soup
Ingredients
- 1 pound boneless, skinless chicken breasts
- 2 tbsp. vegetable oil
- 1 med. onion, minced
- 1 can stewed tomatoes
- 1 lg. carrot, sliced
- 1 c. dry sm. pasta
- 1/2 c. minced parsley
- 2 tbsp. tomato paste
- Salt and pepper to taste
Directions
- Cut chicken into bite-sized pcs and season with salt and pepper. In warm oil, saute/fry chicken till done. Add in 4 c. of water, tomatoes, carrot and pasta. Bring to a boil. Reduce heat to low, cover and cook till pasta is almost tender, about 10 min. Add in parsley and tomato paste. Cover and cook 5 min more.
