- 1 1/2 lb center-cut wild salmon fillet with skin.
- 1/2 c. Pure maple syrup
- 2 1/2 Tbsp. Grainy mustard
- 2 cloves garlic, chopped
- Juice of 1/2 lemon
- Dash of cayenne
Directions
- Soak: large cedar planking water, 1 hour. Heat oven to 400 degrees F.and line baking sheet with foil. heat plank in oven 10 min. Place on prepared pan and put salmon on top. Season with 1/8 tsp. salt. RoSt until nearly opaque in thickest pare, 10-12 min. Remove from over to broil.
- SIMMER: 1 Tbsp. Of the glaze in a bowl. Spoon remaining glaze over salmon and broil 6" from heat untilflesh is opaque, 3-5 min. Spoon reserved glaze over salmon
