Healthy Oatmeal Cookies
Ingredients
- 3 c. Oatmeal (flour)
- 1/2 c. Oatmeal
- 1/2 c. Whole wheat flour
- 1 c. Sucanat* (granulated cane Juice)
- 1 c. Shredded coconut
- 3 Tbsp. Featherweight* (baking Pwdr)
- 1 tsp Salt, Optional
- 1 c. Minced walnuts
- 1 c. Raisins
- 4 Tbsp. Water
- 2 tsp Vanilla extract
- 1/2 c. Honey (raw)
- 1 x 16 ounce. can pineapple
Directions
- 1. Preheat oven to 350 degrees F.
- 2. In large bowl, combine all dry ingredients.
- 3. In blender, mix water, vanilla extract, honey and pineapple. Add in to above contents.
- 4. Drop by spoonfuls on to non-stick baking sheet at 350 degrees F. for 10-12 min.
