Ingredients

  • 3 c. Oatmeal (flour)
  • 1/2 c. Oatmeal
  • 1/2 c. Whole wheat flour
  • 1 c. Sucanat* (granulated cane Juice)
  • 1 c. Shredded coconut
  • 3 Tbsp. Featherweight* (baking Pwdr)
  • 1 tsp Salt, Optional
  • 1 c. Minced walnuts
  • 1 c. Raisins
  • 4 Tbsp. Water
  • 2 tsp Vanilla extract
  • 1/2 c. Honey (raw)
  • 1 x 16 ounce. can pineapple

Directions

  1. Preheat oven to 350 degrees F.
  2. In large bowl, combine all dry ingredients.
  3. In blender, mix water, vanilla extract, honey and pineapple. Add in to above contents.
  4. Drop by spoonfuls on to non-stick baking sheet at 350 degrees F. for 10-12 min.
