Hawaiian Chicken and Rice
Easy prep chicken thighs baked in orange pineapple sauce. Serve over your favorite rice. Ingredients
- 6-8 skinless chicken thighs
- 1 cup orange pineapple juice
- 1/3 C soy sauce
- 1/2 C brown sugar
- 1 tsp. ginger powder
- 3 T vinegar
- 3 T ketchup
- dash Tabasco
- 2 cloves minced garlic or 1 tsp. garlic powder
- 1 T cornstarch mixed with 1 T cold water
- garnish: sesame seeds and minced scallions
Directions
- Turn oven on to 375 degrees.
- Mix juice and the rest of the ingredients together, except the corn starch and pour over the thighs.
- Cover and bake 45 minutes, turning thighs once.
- Remove cover and add cornstarch/water slurry to the pan and stir.
- Bake another 15 minutes.
- Serve on a bed of rice and sprinkle on sesame seeds and scallions.
