  • Hawaiian Banana Nut Bread

    This is a recipe that was put together from several different ones. It easy to make and very good.

    Ingredients

    • 3 cups all-purpose flour
    • 3/4 teaspoon salt
    • 1 teaspoon baking soda
    • 2 cups white sugar
    • 1 teaspoon ground cinnamon
    • 1 cup chopped pecans
    • 3 eggs, beaten
    • 1 cup veg. oil
    • 2 cups mashed very ripe banana's
    • 1 (8oz) can crushed pineapple, drained
    • 2 teaspoons vanilla extract
    • 1 cup flaked coconut
    • 1 cup dry fruit ( I've used craisins or mix fruit)

    Directions

    1. Preheat oven to 350 degrees F (175 Degrees C). Grease two 9x5in. loaf pans.
    2. In large mixing bowl, combine flour, salt, baking soda, sugar, and cinnamon. Add the nuts, eggs, oil, banana, pineapple, vanilla, coconut, and fruit; stir just until blended. Pour batter evenly into the prepared pans.
    3. Bake at 350 for about 60min, or until a tooth pick inserted into the center of loaf comes out clean. Cool in the pan for about 10min, then remove to a wire rack to cool completely.
    4. I like to serve a tropical sauce with it..i'll have it listed also.
