  • Harvest Sweet Potato Pie

    Ingredients

    • 4 x Large eggs
    • 12 ounce evaporated lowfat milk
    • 1 1/4 c. sugar
    • 3/4 c. butter melted
    • 2 tsp grnd cinnamon
    • 2 tsp pumpkin pie spice
    • 1 tsp vanilla extract
    • 1 tsp lemon extract
    • 1/2 tsp grnd nutmeg
    • 1/2 tsp salt
    • 4 c. sweet potatoes cooked and mashed
    • 2 x pie crust (9 inch) unbaked whipped cream optional

    Directions

    1. In a mixing bowl, combine the first 10 ingredients; mix well. Beat in sweet potatoes. Pour into pie shells. Bake at 425 for 15 min. Reduce heat to 350; bake 30 - 35 min longer or possibly till knife inserted near the center comes out clean. Cold completely. Serve with whipped cream if you like. Store in the refrigerator.
