Harvest Sweet Potato Pie
Ingredients
- 4 x Large eggs
- 12 ounce evaporated lowfat milk
- 1 1/4 c. sugar
- 3/4 c. butter melted
- 2 tsp grnd cinnamon
- 2 tsp pumpkin pie spice
- 1 tsp vanilla extract
- 1 tsp lemon extract
- 1/2 tsp grnd nutmeg
- 1/2 tsp salt
- 4 c. sweet potatoes cooked and mashed
- 2 x pie crust (9 inch) unbaked whipped cream optional
Directions
- In a mixing bowl, combine the first 10 ingredients; mix well. Beat in sweet potatoes. Pour into pie shells. Bake at 425 for 15 min. Reduce heat to 350; bake 30 - 35 min longer or possibly till knife inserted near the center comes out clean. Cold completely. Serve with whipped cream if you like. Store in the refrigerator.
