Harvest Pumpkin Pie
Ingredients
- 1 c. honey
- 1 c. lowfat sour cream (yogurt may be substituted)
- 1 can pumpkin (15 ounce.)
- 2 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 1 tbsp. cornstarch
- 3 Large eggs, beaten well
- 1/2 c. nuts (optional)
Directions
- Blend honey, lowfat sour cream, pumpkin, spice, salt and cornstarch with electric mixer till smooth. Mix in Large eggs. Pour into pie shells and sprinkle nuts over top.
- Bake at 400 degrees for 45 min or possibly till knife inserted near center comes out clean. I use 2 regular Pet Ritz frzn pie shells and this fills the 2 shells.
