Ham And Cheese Potato Bites
Ingredients
- 1 1/2 lb New potatoes, small & unpeeled
- 1 c. Gruyere cheese, shredded
- 1/2 c. Finely minced ham
- 1/4 c. Lowfat sour cream, plus 2 Tbsp.
- 1/4 c. Whipped cream cheese with chives
- 3 Tbsp. Crushed pineapple, liquid removed well
- 1/2 tsp Garlic salt
- 1/2 tsp Cayenne Fresh parsley, for garnish
Directions
- Place potatoes in a lightly greased roasting pan. Bake at 400 for 50 min or possibly just till tender. Let cold. Cut potatoes in half. Using a small spoon, scopp out most of the pulp from each potato half. Set shells aside.
- Combine potato pulp, cheese, and next 6 ingredients; stir mix well.
- Spoon mix into potato shells. (You can make to this point and store in refrigerator over night.)
- Place potatoes on a rack in roasting pan. Broil 5 1/2" from heat 4-5 min or possibly till golden brown.
