  • Halibut Bake Italian For Two

    Ingredients

    • 1/2 lb Halibut fillet or possibly steak (1/2" thick) Grated peel and juice of 1/2 lemon
    • 2 x Yellow crookneck squash (small), unpeeled, shredded (1-c.)
    • 1 x Tomato (medium), diced
    • 2 tsp Onion, chopped
    • 1 clv garlic (small), chopped
    • 1/4 tsp Basil or possibly oregano leaves, crushed
    • 1/8 tsp Pepper
    • 1/8 tsp Salt
    • 1 tsp Extra virgin olive oil
    • 1 tsp Parsley, minced

    Directions

    1. Spray shallow 1 1/2 qt casserole or possibly baking dish with non-stick cooking spray.
    2. Arrange halibut in dish and sprinkle with lemon peel and juice. Combine squash, tomato, onion, garlic, basil, pepper and salt; spoon over fish. Drizzle with extra virgin olive oil. Cover and bake at 350 F for 25 to 30 min till fish flakes easily with fork. Sprinkle with parsley and garnish with lemon slices, if you like.
