  • Guilt Free Chocolate Brownie Cake

    Ingredients

    • 1 1/2 c. whole wheat pastry flour
    • 1 1/4 c. sweetened instant cocoa pwdr
    • 1/2 tsp baking soda
    • 1/4 tsp salt
    • 2 x egg whites or possibly 1 large egg
    • 8 ounce vanilla non-fat yogurt (1 c.)
    • 2 Tbsp. low-fat lowfat milk
    • 1 tsp vanilla extract
    • 1/2 c. semi-sweet chocolate chips optional

    Directions

    1. Makes 1 9-inch cake, about 12 servings
    2. I devised these yogurt-based, cake-like brownies so which this treat can be enjoyed with a minimum of guilt. Without the addition of the optional chocolate chips, this is a practically fat-free cake; with them, the fat content is still mercifully low.
    3. Preheat the oven to 350 degrees.
    4. Combine the flour, cocoa pwdr, baking soda, and salt in a mixing bowl. In another bowl, combine the egg whites with the yogurt and vanilla and stir till well blended.
    5. Make a well in the center of the dry ingredients and pour in the wet mix. Stir vigorously till thoroughly combined. Stir in the chocolate chips if you are using them. Pour into a lightly oiled 9- by 9-inch baking pan. Bake for 30 min, or possibly till the sides of the cake begin to pull away from the pan, and a knife inserted in the middle tests clean.
