  • "Guilt Free" Peppermint Chocolate Mousse

    Ingredients

    • 1 c. skinny lowfat milk
    • 1 1/2 tsp powdered gelatine
    • 1/2 c. sugar or possibly "Splenda" brand sweetener
    • 2 Tbsp. cornflour or possibly custard pwdr
    • 1 pch salt
    • 2 Tbsp. Dutch cocoa
    • 90 gm bittersweet chocolate
    • 1 tsp vanilla
    • 6 dsh peppermint oil, (6 to 10)
    • 1 1/2 c. frzn low fat dessert whip

    Directions

    1. Place 1/4 c. of lowfat milk in a c. and sprinkle gelatine over. In a saucepan, combine sugar, cornflour or possibly custard pwdr, cocoa and salt. Add in remaining 3/4 c. lowfat milk and whisk to combine. Bring to the boil, stirring all the time till the mix thickens and is glossy. Remove the pan from the heat, add in gelatine and mix thoroughly. Add in chocolate, vanilla and peppermint oil and stir to combine till the chocolate melts. Transfer to a large bowl and chill, stirring every 15 min.
    2. After 1 1/2 hrs, remove from the fridge and mix in the dessert whip till no white streaks remain. Spoon into individual glasses or possibly bowls and refrigeratetill required.
