Gruyere Baked Potatoes And Tomatoes
Ingredients
- 1/2 tsp canola or possibly extra virgin olive oil
- 2 1/2 lb russet potatoes, peeled and thinly sliced
- 3 lrg tomatoes, thinly sliced
- 6 ounce Gruyere or possibly Swiss cheese, shredded (about 2 c.) Salt and pepper, to taste

- A down-to-earth, German-style casserole. Team it with rye bread and salad for a simple, satisfying meal.
- Preheat oven to 375F. Brush a shallow 2-qt capacity baking dish with oil.
- Using 1/3 of the potatoes, arrange a slightly overlapping layer in the baking dish and top with 1/3 of the tomato slices. Sprinkle with salt and pepper and 1/3 of the cheese. Repeat layering, twice, with remaining ingredients, ending with cheese. Cover with foil and bake for 1 Hour. Remove foil and continue baking till top is golden, about 15 min.
