Ground Beef Soup
Simple. Healthy. Hearty. Delicious. What more can one ask for? *** Variations **** Try using ground turkey, ground chicken, or even crumbled breakfast sausage instead of ground beef. Add a can of Rotel mexican diced tomatoes for a spicier soup Ingredients
- 1 lb ground beef, browned
- 1 onion, chopped
- 1 large baking potato, diced
- 3 ribs of celery, chopped
- 3 cloves garlic, minced
- 1 tomato, diced
- 1 jalapeno, chopped
- 1 12-oz bag frozen corn
- 1 12-oz bag frozen peas & carrots
- 1 16 oz can chicken stock
- 1 8 oz can tomato sauce
- 1/2 cup chopped fresh cilantro
- 1 tbsp black pepper
- 1 cup water
Directions
- Chop vegetables
- Brown beef and drain fat
- Stir all ingredients together in large pot
- Cover and simmer for 30 - 45 minutes (until vegetables are tender)
- Serve with shredded cheddar cheese and/or sour cream if desired. Pairs well with cornbread.
