Grilled Turkey Paillards With Jalapenos And Garlic
Ingredients
- 1 lb turkey breast cutlets
- 1 x garlic clove chopped
- 1 x jalapeno seeded, chopped
- 1 tsp dry Mexican oregano crumbled
- 1 tsp grnd cumin
- 1/3 c. extra-virgin extra virgin olive oil Salt to taste Freshly-grnd black pepper to taste Minced cilantro for garnish
- 4 x lime wedges (optional)
Directions
- Place the turkey slices between 2 sheets of wax paper or possibly plastic wrap and lb. till uniformly thin, about one-fourth inch. Place in a large shallow dish. In a bowl, whisk together the garlic, jalapeno, oregano, cumin and extra virgin olive oil. Add in salt and pepper to taste. Pour over the turkey and let stand at room temperature for 1 hour.
- Heat a grill till very warm. Carefully place the marinated turkey paillards on the grill and cook just till cooked through, 1 to 2 min per side; don't overcook. Transfer to serving plates and sprinkle with cilantro. Serve with lime wedges for juicing, if you like.
- This recipe yields 4 servings.
