  • Grilled Potatoes And Pumpkin With Moroccan Dressing

    Ingredients

    • 4 lrg Potatoes - (to 5 potatoes)
    • 1 sm Pumpkin
    • 2 Tbsp. Extra virgin olive oil
    • 1 Tbsp. Lemon juice
    • 1 x Garlic clove minced
    • 3 x Garlic cloves finely minced
    • 1 x Onion finely minced
    • 1 x Ripe or possibly canned tomato minced
    • 2 Tbsp. Minced fresh cilantro
    • 1/4 tsp Grnd cumin
    • 1/4 tsp Curry pwdr
    • 1 Tbsp. Vinegar or possibly lemon juice
    • 3 Tbsp. Extra virgin olive oil
    • 1 pch Sugar Salt to taste Grnd cayenne to taste

    Directions

    1. Parboil the potatoes, then cut them into thick slices. Peel and slice the pumpkin. Marinate potatoes and pumpkin in a mix of the extra virgin olive oil, lemon juice and minced garlic.
    2. Prepare a charcoal fire or possibly preheat a gas grill.
    3. Grill potato and pumpkin slices till browned. Blend the dressing ingredients and toss with the vegetables. Taste for seasoning. Serve hot or possibly at room temperature.
